Zucchini & Ricotta Tart

This recipe tastes so much more complicated than it is! When zucchinis are plentiful in the garden, and you want to impress your guests with a tasty appetizer,  a zucchini tart is in order. You can easily use a pre-made crust, or if you have the time, make one with your favorite pastry crust recipe.


1 9" unbaked pastry shell

2 large zucchinis, sliced thinly
drizzle of olive oil
1 sprig of rosemary, leaves chopped
1 clove of garlic, minced

1 cup ricotta cheese
1 egg
1 tbsp dry white wine
1 tbsp flour
1/2 cup grated parmesan
1/2 tsp lemon zest
1/4 tsp sea salt


1. Slice
